Cliftons Farm cheese
We have been asked many times over if we were going to make cheese.
Well, we have finally arrived at this moment!
Is the cheese made with your milk?
Yes! The cheese is made with 100% our milk.
Is it raw?
No, our cheese is currently made from our own milk, but the milk is pasteurised during the cheese making process. The reason for pasteurising is because it is not made on our farm.
Will we be selling raw cheese in the future?
Ultimately, that is our aim, but realistically this will be a few years away yet.
We see this pasteurised cheese as a stepping stone towards making a raw cheese in-house one day. We can only do this if we get the support from our customers by buying our currently available cheese.
Who has made the cheese?
A local cheesemaker, Greenfields dairy products Ltd., only 2 miles away and is currently making the cheese for us.
The reason for this is because we don’t currently have the facilities, staff and experience to make it ourselves yet.
What types of cheese do you intend to make?
We are calling our cheese “Cliftons Farm Cheese”. Every batch is somewhat different. The seasons affect the content of the milk (mainly fat and protein). The making process can vary slightly too.
We currently have our 1st and 2nd made batch on sale which were made in different ways.
We would describe the first batch as Rich and Tangy, which resembles a delicious creamy Lancashire.
The second batch is best described as soft and buttery, which resembles a very mild Cheddar.
Alongside the description of the cheese, we will have the usual strength rating, which rates from 1 to 5.
Any feedback will be greatly appreciated. Or if you would like a different type of cheese, please let us know!
Because we have only just started making cheese, the cheese is still very young and mild.
The more mature versions will still be to come. We just have to be patient!
Our recipe is still evolving
To make cheese, you add salt as part of the making process. After a few batches, we decided to change from standard salt to a natural pink himalayan rock salt. So, if you find some pink speckles in your cheese, then this is completely normal.
The cheesemaker has amended the making process to make the curds firmer, since the cheddar style cheese seemed somewhat soft. This is due to the high fat content of our milk.
We might still tweak the recipe further, depending on feedback.

The price stated is the price for a 220g packet, but we will amend the charge depending on the pack of cheese we select for you.
